Dried beef of Yulin was first invented 800 years ago in Song Dynasty. Technically speaking, the beef isn’t dry at all because the beef is stir-fried with much oil before it’s done. The beef is covered with peanut oil, which requires canning for distant transportation. This dish tastes both sweet and salty. With so many spices added, the taste is well-layered. Unlike other dried beef, chewing it isn’t difficult because it’s soaked in oil and soft by it.
